Once again, a holiday has crept up on me and caught me in a bit of a rush. As I've mentioned before, there will be no resource roundup this Saturday. However, rather than follow my Easter basket post with a regular review or article, it seemed like a good idea to look at recipes. Some of you might have Easter traditions and already have your menu carefully planned. Others may experiment with themes. But if you have an open slot in your menu or just want to offer your guests more options, consider the following salads and sides for your Easter meal.

Salads
Simple Fruit Salad: This can serve as a sweet appetizer or even a side dish. Often with fruit salads, I like to experiment with different flavors to see what we like best. But if you are serving fruit salad to children who might be picky, like my nieces, go with something simple like this. I'll be using something similar Sunday. 

Spinach Salad with Apples, Currants and Walnuts: This one is definitely a winner if you love spinach salads as we do here, especially with walnuts. 

Sides
Garlicky Green Beans: If you still need a vegetable side and are considering green beans, why not try this recipe? I tend to like my green beans raw in a salad, but with this garlicky recipe, I may reconsider. 

Roasted Potato Carrots with Citrus: Potatoes are a family favorite at many holiday meals, and my nieces love carrots. So why not combine them as they do in this iVillage recipe? Delicious!
